Making Beef Pastrami:
Making beef pastrami at home can be a time-consuming process, but the result is well worth it. Here's a simplified version of the steps involved:
Ingredients:
- Beef brisket (you can also use other cuts like the navel or plate)
- Curing mix (containing curing salt, sugar, and spices)
- Black peppercorns
- Coriander seeds
- Garlic powder
- Ground mustard
- Paprika
- Ground ginger
- Water
- Coarse cracked black pepper (for the outer crust)
Instructions:
Start by preparing the curing mix. Combine curing salt (pink curing salt #1 or Prague Powder #1), sugar, garlic powder, ground mustard, paprika, and ground ginger in a bowl.
Rub the curing mix evenly over the beef brisket, covering all sides. Place the seasoned brisket in a resealable plastic bag or a covered container and refrigerate for about 5-7 days to allow the curing process to take place. Turn the brisket daily to ensure even curing.
After the curing period, remove the brisket from the curing mix and rinse it thoroughly under cold water to remove excess salt.
Next, prepare the spice rub by crushing black peppercorns and coriander seeds together. Apply the crushed spices all over the beef brisket.
Now, it's time to smoke or steam the beef brisket. If you have a smoker, follow the manufacturer's instructions and smoke the brisket until it's fully cooked and has acquired the desired smoky flavour. Alternatively, you can steam the brisket by placing it in a pot with a small amount of water and steaming it over low heat until tender.
Once the beef brisket is fully cooked, let it rest for a few minutes before thinly slicing it across the grain.
